Recipe with eggs
Ingredients:
450g grounded almonds
225g icing Sugar
225g castor sugar
2 eggs
1 teaspoon almond essence
1 tablespoon freshly squeezed lemon juice
Method:
1. Whisk together the eggs, almond essence and lemon juice
2. Add in the icing, castor sugar and grounded almonds
3. Knead the mixture into a dough
4. Wrap in polywrap and refrigerate for at least 1 hour until required
Recipe without eggs
Ingredients:
240g small pieces of almond paste
400g icing sugar
50g corn syrup
Method:
1. Knead the almond paste together with 200g of sugar until uniform
2. Add another 150g of sugar into the mixture
3. Pour corn syrup in and knead the mixture into a dough for 5mins
4. Spread the remaining sugar on a clean work surface and continue to knead the dough (add slightly more sugar if the dough is sticky)
5. Wrap in polywrap and refrigerate for at least 1 hour until required
Final Step
Colouring:
Take out required amount of Marzipan, add a few drops of food colouring and knead until the dough is of uniform colour. The Marzipan is now ready for shaping into decorative use.

What is Marzipan?
